Whole Wheat Carrot Oat Cake

Surprised !!.. Too many goodies in one cake.. But thats what it is .. A healthy treat with all the taste of an sinful  one :P. I am not that good in baking. Have tried several things but nothing came out to be perfect. But this cake was a surprise for me . So easy to make with all the healthy ingredients, yet so perfect . I cant help but congratulate myself for this wonderful first time bake :) .. Duhh !

Although the original recipe calls for Maple Syrup but I didnt have any so I used honey mixed with 1/2 cup Buttermilk. It worked perfectly fine and the cake was moist enough.

Ingredients:
1. 2 cups of grated carrot
2. 1 cup whole wheat pastry flour
3. 1 cup milk
4. 1/2 cup Apple sauce
5. 2 tsp honey
6. 1 tsp Cinammon powder
7. 1/2 tsp Ginger powder
8. 1/2 tsp Nutmeg powder
9. 1/2 cup buttermilk
10. 1 cup Rolled Oat
11. 1/2 cup shredded coconut
12. 1/2 cup coarsely ground walnuts.
13. 1 tsp baking soda
14. 2 tsp baking powder
15. 1/4 cup sugar ( optional )
16. 1/2 cup raisins.
before going into Oven



Method:
1. Roast the Oats and grind it coarsely.
2. Mix flour, salt, baking soda, baking powder, ground oats, sugar and spices together.
3. Mix honey, coconut, carrot, walnuts, raisins, buttermilk and milk together in another bowl.
4. Add the dry ingredients slowly to the wet ones .
5. Pour into the Cake pan and bake for 40-50 minutes at 180 Degrees.
