Since I am trying Maharashtrian cuisine these days, I am getting to know a lot about the culture as well. Marathi people cherish simplicity in their food. Maharashtrian meals are scientifically planned and cooked—the golden rule being that the cooking medium must not be seen. The vegetables are more or less steamed and lightly seasoned so as to retain their nutritional value. There is almost no deep frying and roasting.
Makar Sankranti is one such festival where the importance of food can not be ignored.. During Makar Sankranti, Gul Poli is prepared for celebration. Here is the simple recipe for Gul Poli or Til Poli as it is called..
Ingredients: For the stuffing
1. 3 cups grated jaggery
2. 1 cup sesame seed
3. 1 cup roasted dry coconut ( I used shredded dry coconut )
4. 1 cup besan
5. 1/2 tsp cardamom powder
6. A pinch of nutmeg powder
7. Ghee to roast besan
For dough :
1. 2 cups wheat flour
2. 1/2 cup maida
3. 1 tsp oil
Method :
1. Roast sesame seeds dry on a tava and let cool off. Grind them coarsely and keep aside.
2.Grate the jaggery and crumble the pieces well.
3. Roast the dry coconut till it gets pinkish in colour. Crumble well and keep aside
4. Heat oil in the pan, roast besan till it changes its colour to brown. let it cool
5. Mix all the above ingredients with nutmeg powder and cardamom powder. Make 7-8 balls for stuffing with this mixture while its still a bit warm.
6. Now, knead the dough using both flours with warm water and keep aside for 2-3 hours.
7. After 3 hours, cook this poli just like any other stuffed parantha without using oil or very little ghee /oil if you want.
8. Cherish it warm !!
Notes:
1. You can also add roasted poppy seeds along with sesame seeds while grinding.
2. Dried nuts like cashews and almonds can be used as a taste enhancer. Grind them along with sesame seeds.
3. For kids, drool some ghee over it.. Maharashtrian people love it this way.. :)
