Sweet Potato Parantha

I have never been a big fan of Sweet Potato. In India too, I have had it only a few times that too as a chaat from the thela walaas in Delhi.. But being aware of its enormous health benefits, I was keen to include it in our diet in some way. Thought of trying it in roti or parantha .. It came out very gud.. Specially in Roti, it was so soft and for parantha, I didnt need to add any oil in the dough.


Ingredients:
1. 2 cups wheat flour
2. 1 sweet potato, boiled and peeled.
3. salt to taste
4. 1 tsp Coriander powder (Dhaniya powder)
5. 1 tsp turmeric
6. 1 tsp black pepper (Optional)
7. 1 tsp red chilli powder
8. Oil to toast paranthas.
9. 1/2 cup chopped coriander leaves

Method:
1. Mash the sweet potato well.
2. Knead the dough mixing all the ingredients together. Keep aside for half an hour.
3. Roll and toast Paranthas on a tava using very less oil.
