Stuffed Parathas have always been my favourite breakfast. I
can have all sorts of Upma, Poha, and Frittatas but ultimately I need this dose
of stuffed Parathas with butter on top for my weekends. Recently Idli- Sambhar
was quoted as one of the healthiest breakfast for one to have. Although I too
agree to that one, I believe Parathas made with less oil and eaten with
appropriate sides would give that a tough competition. Like this Paneer Dhaniya
paratha – Its made of whole wheat flour which is kneaded in yoghurt so that
gives you a good amount of carbs along with pro-biotic bacteria dose for the
day. Fresh grated paneer gives you your protein and healthy fats, coriander
leaves are very good source of vitamins and minerals and the only spice used in this one which is
black pepper is a warm spice known to aid in digestion and normal cold. So all
in all, this is a very wholesome meal which provides energy for the day and
keeps your metabolism in good state. So you see, having this Paratha for breakfast
is not such a bad idea overall. :)
This Paratha involves a very simple preparation and will
taste best when made with fresh homemade paneer. I have given guidelines on how
to make paneer in my post for Sandesh here. You may also use store bought
paneer, but I have seen that dries up very quickly when the Parathas are kept
for long. So if you are planning to eat them fresh, store bought paneer would
do for you.
I had these Parathas first time at my SILs house, when she
prepared them for breakfast. She makes very thin and small Parathas, which
taste amazing and I can have 3-4 on my
own very easily. But I am not that patient to make small Parathas and keep standing
in kitchen for ages. So I make them at my normal size and thickness, even then
I gobble up more than usual. These are so damn tasty !! And the fact that no
spice other than black pepper is used in these bring out the actual flavours of
paneer and hence again, the fresh home-made variety is highly recommended. There is one more version of paneer paratha which I love which is Paneer cabbage Paratha, healthier and you cant figure out its cabbage unless told beforehand. And then there is Palak Paneer Paratha - which is again a very healthy and delicious option to have for breakfast. So pick your choice up and indulge :)

Serving: 3-4 people
What you need?
For the dough:
1 1/2 cups lukewarm water
4 cups Whole wheat flour
1/4 cup yoghurt, at room temperature
1/2 tsp Salt
For stuffing:
1 cup fresh paneer, grated
1/2 cup fresh coriander leaves, chopped
Salt to taste for stuffing
2 tsp black pepper
For roasting:
2 tbsp oil or ghee
How to make
- Knead the dough mixing all ingredients, adding warm water gradually. You may not need this much water, or may need more as well. It really depends on the quality of Atta ( WWF ) you use.
- Keep the dough aside, covered with a damp tea towel for 20-30 minutes
- Meanwhile prepare the stuffing. Grate the fresh paneer and mix salt, coriander leaves and black pepper to it.
- Once ready, pinch some dough, roll into a ball, stuff the filling in and bind the sides. Roll it gently into Paratha and roast on a griddle with little oil, flipping both sides evenly.
- Serve hot with Chutney and Raita

- You may add your own spices to this one, if only pepper is too bland for you
- Adding ginger to this combo also tastes heavenly.

ReplyDeleteI too love parathas for breakfast ...stuffed ones r more preferred though.... 'makhan marke' and with pickle...:) ....never tried the paneer version though...thanks for the recipe :)
ReplyDeleteYour parathas look absolutely mindblowing-- golden and crispy. And they are guilt-free too, with the whole-wheat. I make a vegan version using extra-firm, pressed tofu instead of paneer. I've never added black pepper to mine but love the idea.

ReplyDeleteThe cottage cheese version of the Paratha sounds interesting. I had tried with feta cheese. Isn't it really a great flat bread that is so versatile?
