Dear readers, the guest blogger on UK rasoi today is Neha Mathur, the bubbly girl from the ever so popular blog – Whisk affair. This lady from Bangalore has travelled a lot with her family across India and various other Countries, which is very well reflected in her cooking I must say. She is a Dental Surgeon by education, although she is not practising and spending her time blogging and enjoying with family. Apart from that she likes doing various art and craft work, and her home is full of her own paintings. She also loves to do Interior designing and have done a few projects for her friends. What a multi talented girl, hmm :)
Her space is filled with delectable recipes and witty, transparent, lucid writings promising to leave with a smile and doping an urge to come back for any reason oh not forgetting her gorgeous picture! Honestly I keep Neha's blog post to read in the mornings, you know start the day with a light heart. I eye all her bakes and traditional recipes and keep on bookmarking them, in a hope to try them all some day... Ahh !! The hopes..
Another amusing thing about Neha which I really admire is her ability of managing two separate blogs simultaneously. If you ask me, taking care of one is a full time job for me. And her regular presence on both the blogs is what amuse me so much. Hats off Neha ! :)
Her first blog is - Whisk Affair which brings out her love for baking and since whisk is a very important and basic tool, hence the name.
The second blog- Everyday Musings is focused towards everyday Indian cooking, which is full of tempting pictures and amazing recipes.

Autumn is officially here and I love this time of
the year. It comes with lots of festivities and celebrations and just
the thought of sneaking in a light blanket and sipping some hot soup
with a slice of freshly baked loaf makes me love the season all the
more. Today's post is dedicated to this season and also to all the
friends and well wishers I have made during these last 2 years of
blogging. I came to know Nupur through her blog UK rasoi and loved the
pics and recipes she has put on the space. Easy to follow instructions,
lovely clicks and wonderful recipes took me again and again to her blog.
Some time back, when she asked me to do a guest post for her blog, I happily agreed and came up with the recipe of this Apple and walnut loaf cake, which is one of my favorite coffee cakes and I always associate this loaf with this season. Cinnamon and nutmeg gives this loaf a wonderful flavor and apple and walnuts adds to the flavor and texture. Enjoy this loaf with a cup of coffee or make a meal of it with a bowl of soup like I do. You can also use whole wheat flour to make it healthier.

All you need is
- All purpose flour - 1 and 1\2 cup
- Baking soda - 1 tsp
- Cinnamon powder - 1 tsp
- Salt - 1\4 tsp
- Nutmeg powder - 1\4 tsp
- Vegetable oil - 1\4 cup
- Buttermilk - 1\4 cup ( If buttermilk is not available, add a few drops of lemon juice in 1\4 cup milk and keep aside for 5 minutes and use in place of buttermilk )
- Brown sugar - 1\2 cup
- Apple - 3\4 cup ( grated )
- Eggs - 2
- Walnuts - 1\2 cup ( roasted and chopped )
Method of preparation
- Pre heat the oven to 180 degrees C.
- Grease and flour a 9 inch loaf pan.
- Mix all purpose flour, baking soda, cinnamon powder, salt and nutmeg powder in a bowl.
- In another bowl, mix vegetable oil, buttermilk, brown sugar, grated apple and eggs.
- Mix the dry ingredients in the wet ingredients and mix till combined. ( Do not over mix )
- Fold in the walnuts.
- Pour the mixture in the prepared loaf pan.
- Bake for 40-45 minutes, till a tooth pick comes out clean.
- Cool in the pan for 5 minutes.
- Remove from the pan and cool on a wire rack.
