Mango Saffron Milk Shake

I can be so lazy in posting appropriate recipes as per the Occasion. I have seen Bloggers whose Blogs are always up-to-date with latest festive spirits and Seasonal Food. During Christmas, the Blog goes all Rustic and painted red and if its Summers, it’s all white and yellow again. Specially during Diwali and Ramadan, it’s all sweet and desserts on the blogs. And how can I forget all those pretty and scary Halloween Posts. I totally suck in that area, absolutely ! I have tried, a few times to post as per the mood of the season. To prepare all Diwali Sweets, Christmas Cakes and Puddings and Fresh Orange Punches and what not. But with my luck, the weather and eventually my energy level both give up on me.

This time I got some Mangoes and thought to make Mango Cheese cake, which is very much visible on all these Blogs these days btw. I so wanted to try that, but the moment I took the Mangoes out of Fridge and S sighted them, they were vanished. It didn't even take half a second for them to get from Kitchen platform to Dining table all chopped and smiling at my irony. Another time when I got them, I puréed them same time ( out of my super intelligent mode ) and kept for later use ( which was that same evening, just in case you are thinking how fool I am to keep Mango Puree in Fridge, I know it will stink and all ). I looked in the evening and instead of the Bowl, a Glass full of Mango Shake was waiting for me, with a post-it and a smiley on it saying, “for you”. Phew !! So much for the gesture of love.

So this time when I got the Mangoes, I didn’t wait for anything. I went straight into the kitchen and buckled up for the cheese cake. And as I said, my luck is best when it comes to weather. It went all gloomy and dark on me, plus I had o gelatine. Finally, I ended up making few usual things like Mango Cake, Mango Kesari and this Saffron Mango Shake. I added Saffron just to give this common and popular drink a slight twist. And also because I didn’t want to use Ice-cream for added flavours. So I used Pistachios and Saffron and that imparted this Summer Drink a wonderful flavour and worked as Garnish too. I am wondering what Mr. S is going to do with my next batch of Mangoes now. Hardly any more days left for Sunshine here, hope to get the Cheese cake sorted by then..

I have also tried Mango Lassi before, but I like this Mango Shake more. Mangoes are already a bit tangy and mixing them with Yoghurt which is sour in itself puts me off. Either both Mangoes and Yoghurt are very fresh and super sweet or forget about the Lassi and Enjoy this Shake instead. People usually add Ice-Cream on top with lots of nuts, I keep it simple for family. You may also add Rose water while blending for a different taste. Some other Mango recipes I have tried before are these No Bake Mango Cake, Mango Choco Cake, and these amazing Mini Mango Pancakes..

What you need? – will make nearly 3-4 glasses
2 Mangoes
2 glasses Milk – I used whole milk
1 cup ice cubes
½ cup Sugar – depends on sweetness of Mangoes, so start with 1/3 cup and if not sweet enough increase to ½ cup
5-6 strands of Saffron
2 tbsp chopped Pistachios

How to Make?
Peel Mangoes and take the flesh out. Blend with Sugar first till its pureed completely
Then add milk and run the blender for 1 minutes
Last, add Ice cubes and blend for 2-3 pulses till it gets crushed
Add saffron and pour in glasses. Garnish with chopped Pistachios.

My Notes:
Don’t  add ice cubes with sugar while blending else the Sugar will not melt and mix well
You may use Canned Mango pulp, in that case check the sugar since its already sweet
I haven’t used any Ice Cubes hence I added 1 cup chilled water instead of that
Any other nuts like Cashews and Walnuts can also be used with this, these two go well with Mangoes
To make it Vegan, replace Milk with Soy Milk or almond milk. These two go very well  with Mangoes
