When newbies step in this food Blogging world, they are looking for their own style to write in. For their recipes, writing style, Photography and experiments, they look for people they can relate these things to. It happens to everyone, and when I started I also looked around websites for the same, getting impressed with veterans out there. I still manage to run through a few once in a while, and eventually end up with tonnes of recipes bookmarked. Gayathri is one such Blogger, whose recipes might have filled almost a quarter of my Bookmark space.
Gayathri blogs @ Gayathri's Cook Spot , and is blogging since 2010 but I bet you would feel she is here for like ever when you visit her Blog. Engineer and Fashion Designer by profession, she is a home maker now and designs dresses mostly for her daughter. She stays in Madurai and also writes on two other Blogs: Gayathri's Kitchen Basics and Gayathri's Crafts Spot .
In her own words "I never forget to check on the stats of my blog. The increasing viewer ship, reader’s mails asking for recipes and readers mails wishing me all keeps me going. I also have a large group of friends in the blog world. Though we are miles apart, I feel that I can share my joys and sorrows with them. I feel great when I blog."
Gayathri is the lady behind this successful group called " Eggless Bakes " And though I am big fan of all her Eggless bakes, her traditional food is also mo less. The best part about her Blog is her consistency, and the Recipe Index she has created.. Very well drafted, its easy to navigate and provides a good insight towards the wide range of recipes she has posted. She has a very nice collection of Tamil Nadu recipes, this being her favorite Cuisine ; and as reflected through her wonderful collection, she is interested in collecting old age recipes.
There are so many recipe I have bookmarked from her Blog, I was so confused which one to publish here for this post. But since I want you all to get to know her better, I have selected few of her recipes which I loved the most :

agreed. From then on I have been thinking about the dish I need to make for the post. I got
so many ideas and I had a hard time choosing it. This tart has been in my to do list for long.
When I made puff pastry at home, I decided to make this tart. This tastes great with a scoop
of ice cream but I didn’t have time to prepare it. It tastes great as it is. The soft apple with the crunchy puff pastry with the syrup on top is heaven. We enjoyed it at our home and I hope you like it too.

Ingredients:
- Water-1 1/2cups
- Sugar-1/2cup
- Vanilla Essence-1tsp
- Apple 2 nos
- Puff Pastry Sheet- as required
Procedure:
- 1. In a wide bottomed pan add sugar, water and vanilla essence.
- 2. Bring this to boil.
- 3. Peel and slice the apples into half. Remove the seeds.
- 4. Place them flat side down inside the syrup and let it boil for 5 minutes.
- 5. Remove the apple halves and place on a plate. Allow it to cool.
- 6. Let the syrup boil until it becomes thick and syrupy.
- 7. Remove from flame and allow it to cool.
- 8. With a sharp knife, make incisions on the apples. Do not slice them.
- 9. Preheat oven to 200C.
- 10. Take out the chilled puff pastry sheet.
- 11. Mark the outline of the apple half on the sheet. Cut 1/2cm extra outside the marking.
- 12. Prick the pastry with fork.
- 13. Place the apple half in the middle of the pastry.
- 14. Brush the apple with the syrup.
- 15. Bake the tart until golden. It may take 20-25minutes.
- 16. Remove from oven, brush with syrup and place on wire rack.
- 17. When warm, drizzle syrup on top and serve.
