Be My Guest Anjana : Rajma Cutlet

So this time my guest is Anjana.. Her Blog "Mayeeka" is one of the blogs I surf almost everyday looking for new recipes and guidance. There is something emotional about the look and styling of her Blog, which will direct you towards your own Mayeeka. For those who dont know what the word means, its the home of your Mother, which reflects in her Caption "All that your mother taught you". Living in Dubai for past 27 years, Anjana is basically from Mathura UP.  Apart from being a traditional cook, she loves Music, Reading and Craft as  hobbies. The interesting reason behind this lovely blog is the marriage of her Daughter in September 2011. And hence she found this unique way of handing over her Culinary skills to her daughter through this Blog.

An Avid blogger, she humbly dedicates her accomplishment to her family and blogger friends. Her personal favorite from her creations is this Pineapple Sandesh which she prepared for her son. Well my personal favorites goes to the following entries by her. Although I love almost all of them , these are the ones I am really tempted to try once.

Hi friends

I am Anjana Chaturvedi from Uttar Pradesh and living in Dubai since past 27 year.I am a home maker and mother of 2 grown up kids.Cooking is my passion ,but I start blogging after my daughter got married and start asking for recipes.I am a vegetarian and cook satvik food (without meat, onions and garlic)

I was super thrilled when Nupur asked me to a guest post for her awesome blog U.K Rasoi. I wish to thank Nupur for inviting me .I am very honoured indeed ,to be a part of a her wonderful blog which I always admire and appreciate:)

I am sharing the recipe of the famous Galouti kabab from the Awadhi cuisine of Lucknow (Uttar Pradesh,North India)These kababs are very aromatic and melt in mouth, served with roomali roti, mint yoghurt chutney and salad.

INGREDIENTS-
  •     Boiled rajma-2 cup
  •     Cashew powder-2 tbsp
  •     Cottage cheese-2 tbsp
  •     Ginger paste-1/2 tsp
  •      Red chilli powder-1 tsp
  •     Galouti kabab masala-1tsp *
  •     Fresh coriander-2 tbls
  •     Mint leaves-6
  •     Saffron-a pinch
  •     Corn flour-2 tbsp (optional)
  •     Milk-1tsp
  •     Salt-3/4 ts

PROCEDURE-
  •     Soak saffron in hot milk and crush .
  •     Grind rajma in the mixer with mint leaves and coriander(with steams)
  •     Take a bowl ,add rajma ,mashed cottage cheese,ginger paste, cashew powder, galouti masala,chilli powder,salt and saffron milk.
  •     Make round and medium thick pattice and lightly dust in corn flour.
  •     Heat ghee in a non stick pan and shallow fry these kababs on medium heat from both sides.
  •     Drain on a tissue paper.
  •     Serve hot.
