Spicy n Cheesy Crushed Idli Stir Fry

Is anyone out there who doesn’t love Cheese ?? I simply Adore it, in all forms and varieties. According to me it’s one of the finest inventions mankind has done :D

 I remember the time when those Britannia slices were introduced in India. Off course things must have been there before that as well, but with the commercial Adverts flowing and Posters all over, I was soo curious to taste this sticky slice in bread. My Mum got it for me one day and I even could remember the squeaky sound I produced while attacking on the Packet after having one slice. It has been my second Love ever Since ( First being Sachin Tendulkar !! :D )

Unfortunately this greatest invention is one of the most fatty things in the world too. As If that FACT has stopped me from having it J I have included Cheese in almost every Indian dish we could have. In Paranthas, Dips, Salads, Soups, Curries and even Rice and lentils and I have never had enough of it. With so large a variety I often get confused which one to select for my weekly shopping. Last week it was Goats Cheese which we cherished in our Pasta and Sandwiches. This week it was Cheddar again, the glorious British variety. Used it in baking and some Omelette, the leftover combined with this week’s Saturday Breakfast Idli Stir Fry..



Well, now that’s an unusual combo, but I must confess truly adorable. Since S does not like Idli that much I often prepare this Stir Fry for him to have it and this time I had to say no to him after 3 servings. This Cheesy Stir Fry was made spicy by adding some hot Indian spices as well. And it tatsed Heavenly.. Hmm... After this ramble, I am again willing to go for a scoop of Mascarpone leftover in my Fridge..


Ingredients:
  
  • 7-8 Idlis, crushed
  • 1 large onion, thinly sliced
  • 1 large tomato, chopped
  • Handful of curry leaves
  • 1/2 cup Cheddar Cheese ( you can also use Mozzarella )
  • 1/2 tsp Turmeric Powder, coriander powder
  • 1 tsp Red chili powder
  • Salt  to taste
  • 2-3 green chilies , cut length wise ( or you can take red dried chilies )
  • 1 tbsp Mustard Oil
  • 1 tsp Mustard seeds
  • 1 tbsp Peanuts


Method:
  • Crush the idlis and keep aside.
  • Heat Oil in a pan, splutter Mustard seeds. Fry peanuts for a min and add curry leaves. Again, sauté for a min.
  • Add chopped Onion in that and fry for some time till it gets brown. Add chopped tomatoes and cook covered for 5-6 min.
  • Add salt and spices and mix with tomatoes mixture. Cook again for like 4-5 minutes, this will get tomatoes mushy and tender.
  • Now add the Idli quarters into it and combine gently to avoid breaking the Idli. Cook covered on a low flame for 3-4 minutes.
  • Stir once again, turn off the flame.
  • Sprinkle Cheese over the top and fold in everything. Serve with extra cheese on top.

Notes:
  • You can also add the sprinkle Garam Masala on top for that extra spice.
  • Add coriander leaves for Garnish.

  11. This cheddar cheese ti idli is a fab idea, dear!! I also make the stir fry with tomatoes and onions but never thought of pushing in the cheesy greasy temptation. :)
