I like to experiment with Mushrooms a lot. Baking, curries and soups... Even Mushroom scrambled eggs are my hubby's fav. Mushrooms are low in fat and a very good source of many vital minirals and vitamins. I used Brown button mushrooms in this recipe.
I had never tried them with any kind of daal.. This time I did and the taste was good and different. I didn not want to use oil at all but then Urad daal always has to be cooked with spices so this time I have added tadka in it . Next time I ll try it without oil ..
Ingredients:
1. 2 cup chopped mushrooms
2. 1 cup urad daal, soaked for 2 hours
3. 1 onions, chopped
4. 1 tomato , chopped
5. 2-3 cloves of garlic, minced
6. a small piece of ginger, sliced thin
7. 1 cup cilantro, chopped
8. 1 tsp Coriander powder, 1 tsp turmeric, 1 tsp red chilli powder
9. salt to taste
Method:
1. Cook daal with turmeric, salt and heeng for 5 min. Dont overcook the daal or it will go mushy .
2. Heat oil in a pan and fry onions in it. Add garlic, fry for 1 more min.
3. Add mushrooms and fry them on high flame till they loose their water. Add spices and salt now
4. Add tomatoes and cook for a min. Dont make tomatoes mushy ...
5. Add red chilli powder and after a min add the daal into it. Dont add water as daal should be dry enough.. Cook uncovered for a minute and remove from heat .
6. Garnish with cilantro and ginger slices.
