Twice Baked Herby Potatoes : Double Dhamaal

I love potatoes in any form.. Be it pakode, bhajiya, chaat or in any vegetable as side dish or main .. I even like it as raita, salad or halwa... When I came new to the UK, I had jacket potatoes and instantly became a fan of the. These are so filling and healthiest form of potatoes and can go with any topping. I have made them many times at home and experimented with a lot of vegetables :) .. This time I got this recipe of twice baked potatoes and the picture was soo tempting , I wanted to have them then and there.. Tried the recipe today with some variations and trust me.. I love potatoes even more now.. .They are really healthy and a major part of Indian diet. Its the most humble and versatile but a misunderstood vegetable...

This time I had some mushrooms and a bell pepper left in fridge. Also some herbs like parsley and dill. Any other herb can be used for this recipe. Try for mix and match like chives, sage and basil. Lets getta go now for the recipe :D :D ...


Ingredients:
1. 4 large baking potatoes
2. 1/2 cup sour cream ( I used low fat )
3. 1 large onion, chopped 
4. 2 tomatoes , chopped fine
5. 1 cup mushrooms, chopped fine 
6. Salt to taste 
7. 1 green bell pepper, chopped fine
8. 2 tsp black pepper
9. 1 tsp oregano
10. 1 tsp butter
11. 1/2 cup milk 
12. 1/2 cup cheddar cheese 
13. 1 cup chopped mix fresh herbs ( I used parsley and dill )

Mixture with potatoes 
Method:
1. First wash the potatoes really well and microwave them for 10 minutes. This will save time, else you can also do them in oven for 25-30 min. 
2. Let them cool , cut them into halves and scoop the flesh from between. Be careful  not to damage the skin of potatoes while this. They should be intact in shape. 
3. Mash the flesh in a bowl. It might not be very tender to mash, you can even cut them in small pieces. 
4. Heat butter in a pan, add onion and saute for a minute, add mushrooms and bell pepper and saute till the water evaporates. This will take hardly 2-3 min. 
5. Now take the mixture in the bowl and add tomatoes, mixed herbs, cheese, sour cream, salt, milk, black pepper and mashed potatoes well. 
6. Fill this mixture in the hollow of the potatoes. 
7. Preheat the oven at 180 degree and keep these potatoes for another 15-18 minutes. Mine took exact 15 minutes. 
8. Enjoy them warm .

Notes:
1. You can totally avoid the butter in this recipe. Just roast the veggies for 10 min and add in the potato mix. 
2. Cheese can also be avoided. I added it as I was trying it first time, next time I wont add it.
3. You can do the complete cooking in Microwave, it will take less time and gives same taste. Oven will provide a little smoky taste to the recipe else everything will be same.
