Spinach and Cheese Quesadillas... A Mexican' Treat.. !!

A Quesadilla is a flour or corn tortilla filled with a savory mixture containing cheese and other ingredients, then folded in half to form a half-moon or triangular shape. Its a Mexican Sandwich dish and the word quesadilla derives from the Spanish word queso, meaning cheese... Just thinking of them makes me salivate. These toasted sandwiches have the perfect more-ish mixture with the thin crisp outer layer and cheesy filling inside. 


I usually used to buy ready made tortillas from Store and then prepare with the help of taste enhancer mix given in them. But this time i prepared them at home. And its actually easy and better with what I used to get with the store bought ones. Though the stuffing for these tortillas are endless, I have taken the advise of Tarla Dalal and used paneer and cheese combination to enrich it with calcium and spinach as my all time superfood.  


Yesterday I had a small get together with some kids invited at my place. Presented this to them and it was finished in no time.. Served as a good one dish meal for kids. Mommy bhi khush .. Kids bhi khush .. Mogambo bhi khush :D :D 


Ingredients:

For the Tortillas:
1. 2 cup Maize flour ( Makai ka atta )
2. 1 cup plain flour ( Maida )
3. 2 tsp oil 
4. 1 tsp Salt 


For the Stuffing: 
1. 1 cup grated paneer
2. 1/4 cup cheese shredded, I used ricotta cheese
3. 1 tsp chopped green chilli 
4. 1 cup spinach, chopped, boiled and drained well  
5. 1/2 cup tomatoes, chopped finely and excess pulp drained.
6. 1/2 cup cooked corn kernels.


Method:


For the Tortillas:
1. Mix the flours, salt, oil and make a dough by using enough warm water.
2. Knead the dough well and keep for 1/2 hour. Knead again. 
3. Roll out like a chapati 
4. Lightly toast on a tava and keep aside. 


Next :
1. When ready to serve, spread a little mixture between two tortillas and and press t hem well so that they stick together. ( It wont stick like a usual chapati but jus a little bit )
2. Cook on a tava spreading a little oil on both sides untill they are crisp. 
3. Repeat with all the tortillas. Cut them into triangular or half moon shape. Serve hot
