Potato Zucchini Pancakes : Fried n Baked

Pancakes !!... I read a quotation on it : '' He who goes to bed hungry, dreams of Pancakes ''

I bet that is right once you taste this enduring breakfast recipe which is loved all across the world. Even in India, we know it by the different names of Dosa, Adai, Utthapam, Thalipeeth, Cheela etc... To sum it all, lets call it by the name of Pancake only. This one, I made it with a combination of several recipes I read over net. I tried the shallow fried version and the baked one too. Both were equally good for me, but to get the exact feel of a pancake, one must try the deep fried form. Its heavenly !!

Zucchini is a low calorie, anti-inflammatory vegetable which is good for heart and Blood pressure. Its also an good source of fiber, vitamins and proteins. I got a kg of it last week and made chana-turai yesterday. Still left with 3-4 of them. So tried this pancake with Indian spices as breakfast in the morning..Added some potatoes and carrot pieces too for more tempting result. Also, replaced most part of all purpose flour with cornmeal. Cornmeal has its own nutritional benefits. All in all, Loved 'em .. Do try !!!

Ingredients:
1. 2 cups of grated zucchini
2. 1 cup of grated potatoes ( after peeling )
3. 1 carrot, grated
4. 1 1/2 cup cornmeal
5. 1/2 cup all purpose flour
6. 1 tsp baking powder
7. 2 tsp salt
8. 1 tsp of turmeric, red chilli powder, black pepper powder, coriander powder each
9. 1/2 cup of green spring onions, chopped
10. 1 tsp of Kasuri methi ( optional )
11. 2 medium eggs
12. 1 tsp sour cream ( optional )
13. Oil for shallow frying
Shallow fried 
Method:
1. Mix the grated carrot, potato and zucchini together in a bowl. Mix flours, spices and baking powder in another. Mix in the two together well.
2. Beat eggs and sour cream well together and add to the above mix. Add rest of the ingredients and give everything a nice stir. Keep away for 15 minutes.
3. Heat oil in a pan, drop the spoonful of batter into the pan. Let the side cook well and flip. Cook till it get little brown and crispy.
4. Keep it on a kitchen towel to soak extra oil. Make 2-3 in one batch.

Baked Version :
1. Perform steps 1 and 2 .
2. Preheat oven at 180 degrees, gas pressure 5. Drop the batter on a baking dish, 4-5 at a time,  well spaced.
3. Bake for 15 min then flip the side and bake for another 15 min. It will be brown by sides and crispy.
