Here comes Sunday and demand for Parantha follows.. Every Sunday its a ritual for us to have stuffed Paranthas. I keep on looking for new and innovative ideas for stuffing every now and then. But the aalu parantha and peas parantha are never beaten out. Every alternative weekend, we enjoy any one of the two. S is such a big fan of these two forms, that he some how manages to get this from me :)... The use of Panchphoran Masala enhances the taste to a higher level and provides a very sweet yet crunchy taste to this specialty Parantha.
Green peas are a whole house of nutrients and tastes wonderful. They are used in a variety of cuisines and courses be it dessert, snack or main course. These sweet tender balls are low in calorie, yet high in protein and mineral value. They are also a good source of Vitamin K, C and Beta Carotene. Even though dried beans contain less nutrients than the fresh ones, but the calorie content is higher in dried peas.
Lets come back to the recipe. :)
Ingredients:
1. 2 cups of boiled green peas
2. 2 tsp salt
3. 2 tsp Panchphoran Masala ( See the recipe here )
4. 1 tsp red chili powder
5. 2 onions, chopped small
6. 1 tsp cumin seeds
7. 1 tsp ghee
For the dough :
1. 2 cup whole wheat flour ( atta )
2. 1 tsp salt
3. 1/2 cup warm milk to knead the dough ( I used skimmed )
Method:
1. Knead the dough using the ingredients and keep aside for 20 min. Knead again gently before using.
2. Heat ghee in a pan, add cumin seeds and onions. When it turn brown, add spices and cook again for a minute. Add peas and cook for 4-5 minutes. Peas should be a bit mushy and should have absorbed the spices well. Keep the stuffing aside and let it cool off.
3. Heat tava, roll the parantha with stuffing inside and roast with little oil or ghee.. Serve hot with raita or chutney.
Notes:
1. Use of panchphoran is essential for me if am making these paranthas. But you can replace it with other spices, still I would recommend its use.
2. You can also use ghee while kneading the dough, in peas parantha this will really provide aromatic flavor...
3. Peas are naturally sweet in taste so keep checking for the spices before stuffing it in parantha according to your taste.
4. I use a lot of onion in stuffed paranthas. It gives an amazing sweetish taste to the stuffing specially with Aalu parantha and peas parantha..
