Spinach Coconut milk Masiyal

Spinach is my favorite vegetable. I try to infuse it everything I prepare, whether its Chapathi, daal, side dish or any rice dish. Hey, and has anyone watched Master Chef India Season 1 ?? The finale contestant Jaya ( he was my favorite ) had made spinach halwa, will try that very soon. Anyways, that will get to a full circle of spinach snacks till dessert.

This recipe made of spinach and coconut milk was very unique to me. I had never heard of anything like this. But the combination of both was amazing.Since spinach is a bit bitter in taste, so the combination works very well with the mild sweetness of coconut milk. Loves the aroma of the dish. Ingredients:
1. 2 cups Spinach, chopped
2. 1 cup Coconut milk, I used canned
3. 1/2 cup water, more if required
4. 5-6 garlic cloves, minced
5. 1 tsp Urad daal, mustard seeds, black pepper each
6. dried red chilies 2-3
7. salt to taste
8. 1 tsp Oil
Method:
Mix coconut milk and water together and bring to a boil. Add spinach leaves and cook till it gets wilted. This will take around 5-6 minutes.
Blend in a blender and adjust the seasoning.
In another pan, heat oil and sizzle mustard seeds. Add red dried chilies and garlic cloves and fry till brown. Add to the cooked spinach and simmer till it gets thick. Add tadka and enjoy hot.


See, its so simple and yet its amazing to have this warm along with a side vegetable or rice. You can also have it as a soup by mixing some cubed and boiled potatoes or peas.
