Crustless Spinach Quiche

Quiche is something which I never had in India. Infact it was one of those things which I tasted as a trial in my initial days in the UK. That was Quiche Loraine which I tried first, its a savory, open-faced pie of vegetables , cheese or meat , baked in a pastry Crust. Its wonderful when eaten warm along with the Salad. Very easy to prepare ( although you have to get the pastry crust ready first ). I chose it from Priya's Blog while I was wandering there for Blog Hop.. It was really confusing, since she has a huge number of recipes and all so good and distinctive... Love her blog.


The word Quiche is derived from the German Word Kuchen which means Cakes. Recipes for Quiche dont have to be daunting, just take the time to make homemade pastry for a crispy slice of nostalgia. Although this recipe has not crust,  still its a wonderful combo of Eggs, spinach and milk. Caramelized onions and parsley dash bring an enhanced texture which is delicate yet flavorful. With no cream and extra fat, this crustless quiche is sure to win hearts..


Ingredients:
1. 3 cups Spinach, chopped finely
2. 2 cups milk 
3. 2 eggs
4. 1 large onion
5. 2 tbsp All Purpose Flour
6. 2 tbsp Parmesan Cheese
7. 1 tsp fresh Parsley, chopped
8. 1 tsp black pepper, coarse 
9. Salt to taste, around 2 tsp 
10. 1 tbsp oil
11. 1/2 cup Chedder Cheese


Method:
Heat oil in a pan and saute onions for 10-12 min till perfectly caramalized. They will release a sweet aroma with dark brown colour when done.
Add spinach, salt, pepper powder and cook for 2 min. Turn off the flame
Heat another pan and dry roast APF for 3-4 min on medium flame stirring continuously. Let it cool on room temperature.
Now, in a bowl, whisk together eggs and milk first with a pinch of salt till its fluffy and creamy. It will take around 4-5 minutes. Add parsley, cheddar cheese and roasted flour after sifting into the egg mixture and whisk again for some time till its all mixed up well. 
Combine both the mixtures together and fold into each other. Grease a baking sheet and preheat the oven at 180 Degree. 
Pour the mixture into the greased baking sheet, sprinkle Parmesan Cheese on top and bake in the oven for 20-25 min just till the crust starts turning golden. 
Leave it for some time on room temp before serving.

  3. very nice recipe..jus t a quickie...shoudl the onions and spinach be combined with the rest of the mixtures or just spread on top after pouring in the beaten mix?

  4. Hi Hyma... You have to gently fold in the spinach with egg mixture. Not vigorously but just for a few sec to combine both well. If you will do it vigorously, it will not fluff up properly :)

  5. Absolutely delish! What better way to eat finicky kids( and hubby) eat spinach ? The qty of cheese is very les s compared to so many recipes.... I ll definitely make this , hopefully this week! :)
