When in India, I always preferred Pineapple cakes over most hyped Chocolate cakes. Loved the fresh layer of cream filled with small pineapple bites. Never thought how they would be made though. Even I love pineapple Raita too. Not many people have this flair for Pineapple, I have seen. But I love this chunky sweet fruit. Since its Wednesday :D, am active again for Blog hopping, this week to Jyoti's Blog . More than her recipes, I have read her book reviews. Lovely writing she does. I selected this recipe because of its simplicity and again, pineapple :D See the original recipe here. The addition of cardamom is interesting. But please forgive me for pics. I ran huffing and coughing from station to home so that I could get a few last rays of light. But bura ho in Winters ka :( .. By the time I got home, it was already late. Immediately I pulled put my camera but .. ugghhh !! no battery . bad luck today , so plzz forgive me for the pics taken in sad lights ..
Ingredients:
1. 1 1/2 cup AP flour
2. 1/2 tsp Baking soda
3. 1 tsp Baking powder
4. 1/4 cup butter + 1 tbsp Olive oil
5. 1 cup Condensed milk
6. 1 cup of Pineapple juice
7. 1 tsp Cardamom powder
8. 1/2 cup pineapple chunks
Method:
Sieve flour, baking powder and baking soda together in a bowl and mix. In another bowl, whisk together butter and condensed milk till it gets fluffy.
Combine both the wet and dry ingredients together and beat really well for a min. Gradually add pineapple juice and keep beating till it gets all mixed up.
Fold in pineapple chunks and cardamom powder. Grease a bread tin with olive oil, sprinkle some flour.
Pour in the batter and bake in a preheated oven at 180 degrees for 35-40 min.
Notes:
You may also drizzle some maple syrup over this
Please go ahead and add more pineapple in the batter if you are a fruit fan like me. The most amazing bites were those when I had these little chunks in bread. :P

They still look great Nupur.. Am sure it tasted good too.. I can totally understand your situation. I hate colder months and not able to get glimpse of sun..
