Paneer Bhurji : With Spinach


Kids often make faces while eating green veggies. Although I loved them when in my childhood. Mom used to make a lot of them during Winters and I cherished that time. Though she never tried this recipe, I did and adored it since then. Its a lovely blend of Sabka favourite Paneer and Superfood Spinach. One of the best combo in terms of taste and health. Full of calcium, iron and vitamins. Try this on a warm day with Buttermilk aside and Hot Daal in winters. You will find it irresistible either ways
Ingredients:
1.        2 cups scrambled Paneer ( I used fresh home made with 2% Milk )
2.        1 cup chopped spinach
3.        1 tomato, chopped
4.        1 large onion, chopped
5.        2 green chillies, chopped
6.        1 tsp salt, cumin seeds, red chilli powder, turmeric each
7.        A pinch of Asafoetida and Cinnamon each
8.        ½ tsp of Black Pepper, Garam Masala each
9.        ½ cup of chopped Coriander
10.     1 tsp oil
Method:
1. Heat oil in pan, splutter cumin seeds. Throw in Asafoetida and cinnamon and stir for 5 sec.
2. Add in onion and sauté for 2 min till it changes colour.
3. Add in tomatoes and cook covered for a min. Don’t let them over tender.
4. Add spinach and mix well. Cook covered for a min, it will wilt down. Cook uncovered for another 2 min.
5. Now, add crumbled Paneer and combine it well with the mix.
6. Cook till the water evaporates, will take around 2-3 min on medium flame. Keep stirring.
7. Turn off the flame, garnish with Garam Masala, black pepper and cilantro.
