Spaghetti is a sure shot comfort food.. It takes place in my kitchen almost every fortnight. S likes it most among all its pasta siblings. The smooth texture and slipping taste makes it the best choice for Sunday breakfast palate. A great way to include lots of vegetables in your menu.
I used to make it in the usual way of adding vegetables in the sauce. But this time I tried a different method and approach to add the vegetables. And the result was equally amazing. S never believed there are vegetables in that sauce.. A perfect blend of nuts and vegetables...Try it , you will surprise yourself :)
Ingredients:
1. 7-8 Tomatoes, pureed
2. 3-4 green chillies
3. 3-4 red dried chillies
4. 1/2 cup fresh basil leaves OR 1 tsp dried basil leaves
5. 5-6 walnuts
6. 7-8 cloves of garlic , minced
7. 1 cup of spinach leaves, steamed and pureed
8. 2 tbsp olive oil
9. 2 tsp grated Parmigiano Reggiano cheese
10. 1/2 cup Rocket leaves ( optional )
11. 2 tsp salt
12. 1 tsp black pepper, oregano each
13. 1/2 cup cauliflower OR broccoli, grated
14. 1/2 cup boiled green peas.
15. 1/2 cup finely chopped capsicum/ bell pepper
16. 200 gms whole wheat spaghetti noodles, cooked according to packet instructions.
Method:
1. Grind pine nuts and walnuts in a grinder. Keep aside
2. Mix green chilies, red dried chilies, basil leaves, rocket leaves together in a blender. Keep aside
3. Heat 2 tbsp olive oil in a pan, fry garlic. add pureed tomatoes, spinach and saute for a minute.
4. Add blended paste and ground nuts mix with salt and cook covered for a minute.
5. Combine all the vegetables and cook covered for 3-4 minutes. Add spices and mix. Turn off the flame.
6. Place the cooked spaghetti in a plate, pour in sauce over the top.
7. Grated Parmigiano Reggiano cheese and enjoy it hot :)
