Capsicum Masala



I wrote this post while we were suffering without Internet connection after moving. I got so bored sitting idle at home with nothing but pack/unpack to do. So, just kept down some of the recipes I made during that chaos. Simple yet they all are, still tried to give them all new colour and tastes..

Capsicum has always been my favorite, Versatile and flavourful, can be used in many ways to achieve different levels of savour. In India, we only used green variety and here in the UK although all colours are available, I still prefer the green bell peppers due to their sharp and spicy tang.  Usually add red and yellow ones for the extra colour in the veggie.Capsicum helps in curing many diseases that include lowering blood pressure, reducing cholesterol and warding off strokes and heart attacks, speeding up metabolism, treating colds and fevers, preventing cancer and pain control. It contains Vitamins A and C, and beta-carotene. It's low in fat, calories and cholesterol. If you thought your diabetic diet was supposed to be boring, try spicing up your cuisine with this nature's gift. 


This simple side dish will surely suit the weekday’s menu perplexity and kids will love this colourful mishmash. 


Ingredients:
  1. 3-4 Capsicums ( different or same colour ), chopped small
  2. 2 potatoes, peeled and chopped
  3. 1 large onion, diced
  4. 1 large tomato, chopped
  5. 1 cup Paneer cubes ( optional )
  6. 1 tsp salt, red chilli powder, turmeric, coriander powder, cumin seeds each
  7. 1 tsp ginger-garlic paste
  8. 1 tsp black pepper
  9. 1 tsp oil
  10. Cilantro to garnish


Method:
  1. Heat oil in a pan, allow cumin seeds to splutter. Add onions and fry till brown.
  2. Add ginger-garlic paste and all spices except black pepper and stir for 2 min.
  3. Add potatoes and mix well. Cook covered for 4-5 min until potatoes get half cooked or slightly tender. Since potatoes take more to cook than capsicums, they need to get a bit tender before we put capsicums in.
  4. Add capsicums and combine well. Cook covered for another 2 min.
  5. Include tomatoes and paneer cubes. Fold everything well together and cook covered for 5-6 min. If gets dry, sprinkle some water.
  6. Sprinkle black pepper, fold together and keep covered for a min to absorb the spices.
  7. Garnish with cilantro.
