As I told you, I am still amateur on Maharashtrian Cooking, this recipe calls for a fresher like me to try it. This is a very basic and authentic recipe which is staple in most Maharashtrian families.
Peanuts are very nutritious and carry many health benefits. You will be surprised to know that not only do peanuts contain oleic acid, the healthful fat found in olive oil, but new research shows these tasty legumes are also as rich in antioxidants as many fruits. They help in preventing Gallstones, providing over 30 essential nutrients and phytonutrients, boosts memory power, lowers risk of heart disease and helps lower cholesterol levels. They also are naturally free of trans-fats and sodium, and contain about 25% protein (a higher proportion than in any true nut). So much for also being calorie dense nuts.. So what, they have immense health benefits, go ahead and enjoy them .
I have tried my own variations with this simple recipe to make it more nutritious.
Ingredients:
1. 1 cup roasted and skinned peanuts
2. 2 tsp flax seeds.
3. 2 tsp sesame seeds
4. 3-4 dried red chillies
5. 3-4 garlic cloves
6. Salt to taste
7. 1 tsp mustard oil
8. 5-8 curry leaves
9. 1 tsp cumin seeds
10. 1 tsp coriander seeds.
Method:
1. Dry roast Peanuts and skinned them. Keep aside
2. Dry roast sesame seeds till they are light brown. Dont over heat. Keep aside
3. Dry roast cumin seeds, and coriander seeds together and grind them to a fine powder.
4. Add sesame seeds, peanuts and garlic cloves and grind again to make a crunchy powder, thick in texture.
5. Now, heat oil in a pan and add curry leaves and dried red chillies into it. Dont over fry them, just give a short stir for 1 minute, mixing well.
6. Mix this with the chutney and give it all a last grind together adding salt.
7. Store in Air tight container in Fridge for over 10 days.
Notes:
1. If you dont want to use oil , you can dry roast curry leaves also instead of using oil.
